Ingredients
For Boondi Batter
- 1 cup gram flour
- ⅛ tsp baking soda
- ⅛ tsp Yellow food coloring
- ½ cup water (adjust as needed)
- Oil (for deep frying)
For Sugar Syrup
- 1 ¼ cups sugar
- ½ cup water
- 1 tsp ground cardamom
- ¼ tsp crushed cloves
For Fried Nuts & Final Garnish
- 3 tablespoon cashews (broken into small pieces)
- 3 tablespoon raisins
- 1 tablespoon sugar candy
- 1 tablespoon ghee
Instructions
Sift the gram flour into a bowl to remove any lumps. Gradually add water, whisking until a smooth, thick batter forms. Stir in the baking soda and yellow food coloring, mixing thoroughly. This consistency ensures round, soft boondis.
Heat oil in a deep frying pan. Using a perforated ladle or a boondi ladle, pour a ladleful of batter over the holes, letting the batter drip through and form small droplets (boondi) in the hot oil. Fry until the boondi are lightly cooked but still soft, then drain and set them aside.
In a saucepan, combine the sugar and water. Stir over medium heat until the sugar dissolves, then bring the syrup to a boil. Continue boiling until it reaches a single-string consistency (test by dropping a small amount of syrup from a spoon; it should form a single thread between your fingers). Remove from heat, add the cardamom and clove powder, and stir well.
In a mixing bowl, add the fried boondi and pour the sugar syrup over it. Gently press the boondi with a large ladle to help them absorb the syrup and create a lightly mashed texture.
In a small pan, melt the ghee and lightly fry the cashews until golden. Add raisins and fry until they puff up. Pour this mixture, along with the sugar candy, over the boondi. Mix thoroughly.
Shape the LaddusTake a small handful of the mixture and shape it into a firm ball. Repeat with the remaining mixture to form all the laddus. Allow them to set for 2-3 hours until firm.
