Knowing how to choose the freshest prawns from these options is essential for ensuring a delicious dining experience.

How to Choose Fresh Prawns

  • Firm Shells and Heads:
    Look for prawns with intact, firm shells and firmly attached heads. Prawns with missing or loosely attached heads may have been mishandled or are no longer fresh.
  • Clear, Healthy Eyes:
    Fresh prawns should have prominent, clear eyes. Avoid those with sunken or missing eyes, as these are signs of age or poor quality.
  • Smell Test:
    Fresh prawns should have a slight salty aroma, similar to seawater. If they smell like ammonia or have an unpleasant odor, this indicates bacterial growth and potential food poisoning risks. Avoid prawns with any “off” smells.
  • Uniform Color and No Black Spots:
    Fresh prawns should have a consistent color across their bodies, without any discolouration. Watch out for black spots on the shell, as this can indicate aging or improper handling.
  • Translucent Flesh:
    Fresh prawns should have translucent, shiny flesh that appears bluish-grey or white. If the flesh is pink, the prawns have already been cooked and should be avoided unless buying pre-cooked.
  • Keep the Shell On:
    Whenever possible, choose prawns with the shell still intact. Shelled prawns can become rubbery and lose their natural flavor when cooked. Cooking prawns in their shells helps retain moisture and enhances their flavor.

  • Freeze as Soon as Possible:
    If you’re not cooking the prawns immediately, freeze them to maintain their freshness. Prawns can be frozen with or without their shells, but it’s recommended to remove the heads before freezing.
  • Bottle Freezing:
    An effective method for freezing whole prawns (with or without shells) is to place them in a clean drink bottle, fill the bottle with water, seal it, and freeze. This keeps the prawns from drying out and allows for easy portioning. Freeze smaller portions (250g or 500g) for convenient use.
