  • 2 tbsp. extra-virgin olive oil
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (15.5-oz.) can black beans, rinsed and drained
  • 1 (15.25-oz.) can corn, drained
  • 3 c. cooked, shredded chicken
  • 1 (4.5-oz.) can diced green chilis
  • 2 (10-oz.) cans enchilada sauce
  • 18 corn tortillas
  • 2 c. shredded cheddar
  • 2 c. shredded Monterey jack
  • Sour cream, for garnish
  • Freshly chopped cilantro, for garnish
  • Diced avocado, for garnish

Step 1: Prepare Your Flavorful Mix

Begin by preheating your oven to a toasty 350°. In a spacious skillet over medium heat, let 2 tablespoons of extra-virgin olive oil work its magic. Add in the chopped onion and bell pepper, sautéing until they’re delightfully soft, about 5 minutes. Introduce the minced garlic, letting its aroma dance for an additional minute. Next, add in the black beans, corn, shredded chicken, and diced green chilis, allowing them to mingle and warm up for about 5 more minutes. Reserve ½ cup of the enchanting enchilada sauce before pouring the rest into the skillet, stirring with care until everything is harmoniously combined.

Step 2: Layer Up the Love

Now, let’s build those layers of goodness! Spread the reserved ½ cup of enchilada sauce into a 9”-x-13” baking dish, ensuring every inch is kissed with flavor. Layer 6 corn tortillas over the sauce, overlapping them with care to blanket the entire pan. Pour about a third of the tantalizing mixture over the tortillas, then sprinkle about a third of each cheese atop the savory concoction. Repeat this delicious layering process two more times, finishing with a generous blanket of cheese on top.

Step 3: Bake to Perfection

Slide your creation into the preheated oven and let it bake for about 30 minutes, or until the cheese achieves melty perfection and the sauce is playfully bubbling with excitement.

Step 4: Garnish and Serve with Gusto!

Once your masterpiece emerges from the oven, it’s time to add the finishing touches. Garnish your Chicken Enchilada Casserole with dollops of creamy sour cream, a sprinkle of freshly chopped cilantro, and generous chunks of diced avocado.

Savor each mouthwatering bite of this flavorful fiesta, as every layer unfolds a symphony of taste that’ll leave you craving more. Enjoy!
