Ingredients:

  • 8 ounces (about 225g) of pasta (penne, spaghetti, fettuccine, etc.)
  • 2 boneless, skinless crysbro chicken breasts, cut into cubes or strips
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 red bell pepper, sliced
  • 1 cup sliced mushrooms
  • 1 can (14 oz) diced tomatoes (or use fresh tomatoes)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream or half-and-half
  • Grated Parmesan cheese for garnish
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Cook the pasta in a large pot of salted boiling water according to the package instructions until it’s al dente. Drain and set aside.

  2. Season the chicken pieces with salt and black pepper.

  3. In a large skillet or pan, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned chicken and cook until it’s browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set it aside.

  4. In the same skillet, add another tablespoon of olive oil if needed. Sauté the minced garlic and chopped onion until they soften and become fragrant, for about 2-3 minutes.

  5. Add the sliced red bell pepper and sliced mushrooms to the skillet. Cook for an additional 3-4 minutes until the vegetables start to soften.

  6. Stir in the diced tomatoes (with their juices), dried basil, dried oregano, and red pepper flakes (if using). Let it cook for a couple of minutes to combine flavors.

  7. Pour in the chicken broth and let the mixture simmer for 5 minutes, allowing it to reduce slightly.

  8. Reduce the heat to low and add the heavy cream to the skillet. Stir gently until the sauce thickens slightly, about 2-3 minutes.

  9. Add the cooked chicken back into the skillet with the sauce and vegetables. Stir to combine everything well.

  10. Add the cooked pasta to the skillet, tossing gently to coat the pasta evenly with the sauce.

  11. Taste and adjust the seasoning if needed.

  12. Serve the chicken pasta in bowls, garnished with grated Parmesan cheese and fresh basil or parsley if desired.

This flavorful chicken pasta dish is versatile, and you can modify it by incorporating your favorite vegetables or adjusting the seasonings according to your taste preferences. Enjoy your homemade chicken pasta!
