
INGREDIENTS
- 1 1/4 cups all-purpose flour with
- 1 teaspoon of baking soda
- 1 1/4 teaspoons White sugar,
- Salt, 1/2 teaspoon
- 1/2 tbsp melted butter
- 1/2 cup thawed frozen blueberries
- A cup of milk
- 1 egg
DIRECTIONS
Sift together the flour, baking soda, sugar, and salt in a sizable bowl. In a small bowl, mix the milk and egg. Just combine the egg mixture with the flour mixture. Add melted butter and blueberries and fold them in. Leave alone for an hour.
Over medium-high heat, preheat a nonstick frying pan or lightly oiled griddle.
Using about 1/4 cup of batter per pancake, pour or scoop the batter onto the heated griddle. Cook the pancakes until bubbles start to emerge on the surface, then flip them over and cook the other side until both sides are golden brown. Serve warm.
