color: #000000;\">Red chilli sauce \u2013 2 tbsp<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400; color: #000000;\">Dark soy sauce \u2013 1 tbsp<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400; color: #000000;\">Spring onions \u2013 for garnish (optional)<\/span><\/li><\/ul><h2><span style=\"font-weight: 400; color: #000000;\">Instructions<\/span><\/h2><ol><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"color: #000000;\"><span style=\"font-weight: 400;\">Marinate the Chicken<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\"> In a bowl, mix the chicken with soy sauce, salt, pepper, red chilli powder, rice flour, all-purpose flour, and egg white. Fry the marinated chicken in batches until golden and crispy. Drain on a paper towel.<\/span><\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"color: #000000;\"><span style=\"font-weight: 400;\">Prepare the Aromatics<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\"> In a wok, heat 1 tablespoon of oil. Add chopped ginger, garlic, and a bit of red chilli paste if using. Saut\u00e9 for 30\u201345 seconds until aromatic.<\/span><\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"color: #000000;\"><span style=\"font-weight: 400;\">Add Vegetables<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\"> Toss in the onions and capsicum. Stir-fry on high heat for about 1 minute. They should soften slightly but stay crisp.<\/span><\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"color: #000000;\"><span style=\"font-weight: 400;\">Toast Cashew Nuts<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\"> Add cashews and saut\u00e9 for another 10\u201315 seconds until lightly golden.<\/span><\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"color: #000000;\"><span style=\"font-weight: 400;\">Pour in the Sauces<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\"> Add red chilli sauce, soy sauce, ketchup, vinegar, salt, and pepper. Mix everything well and cook for 10\u201315 seconds.<\/span><\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"color: #000000;\"><span style=\"font-weight: 400;\">Thicken the Sauce<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\"> Stir in the cornflour slurry and cook for another 15 seconds. The sauce should become glossy and coat the spoon like a glaze.<\/span><\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"color: #000000;\"><span style=\"font-weight: 400;\">Combine with Chicken<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\">Add the fried chicken to the wok. Toss everything well so that the sauce coats each piece evenly. Do this just before serving to maintain the crispiness.<\/span><\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"color: #000000;\"><span style=\"font-weight: 400;\">Garnish &amp; Serve<\/span><span style=\"font-weight: 400;\"><br \/><\/span><span style=\"font-weight: 400;\"> Top with chopped spring onions.
