color: #000000;\">Confectioner\u2019s sugar and berries for serving<\/span><\/li><\/ul><h2><span style=\"font-weight: 400; color: #000000;\">Instructions<\/span><\/h2><ol><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400; color: #000000;\">Preheat your oven to 400\u00b0F (205\u00b0C).<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400; color: #000000;\">Generously butter four \u00bd-cup ramekins and dust them with cocoa powder. Alternatively, use a double boiler for melting.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400; color: #000000;\">Stir the sugar and vanilla extract into the warm butter-chocolate mixture.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400; color: #000000;\">Whisk in the eggs and egg yolks until well combined. The mixture will be thick and slightly \u201cgloopy.\u201d<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400; color: #000000;\">Gently whisk in the flour until fully incorporated.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400; color: #000000;\">Pour the batter into the prepared ramekins, filling them no more than \u00be full.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400; color: #000000;\">If not baking immediately, cover the ramekins with plastic wrap and freeze or refrigerate until ready.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400; color: #000000;\">Place the ramekins on a baking tray and bake in the preheated oven. Bake for about 11 minutes in metal ramekins or 12 minutes in glass\/porcelain ramekins. For frozen cakes, refer to the recipe notes for adjusted baking times.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400; color: #000000;\">Remove from the oven and let the cakes rest for about 30 seconds to 1 minute.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400; color: #000000;\">Carefully turn the cakes out onto serving plates using a towel or cloth napkin (be cautious as the ramekins will be hot). Tap the top of each ramekin with a spoon to loosen the cake, then gently lift off the ramekin.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400; color: #000000;\">Dust with confectioner\u2019s sugar and serve immediately with raspberries or strawberries, or other toppings of your choice.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400; color: #000000;\">Butter and dust 7 to 8 cupcake cavities with cocoa powder.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400; color: #000000;\">Pour about 70\u201372 g of batter into each cavity (about \u00be full).<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400; color: #000000;\">Bake in the preheated oven for 7\u20138 minutes.<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400; color: #000000;\">Once baked, place parchment paper over the cakes, followed by a half-sheet baking pan (upside down).<\/span><\/li><li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400; color: #000000;\">Flip the cupcake tray and baking pan together.
