- 2 1/4 cups (532 ml) filtered water
- 1 cinnamon stick (3-inch, Ceylon or cassia)
- 3 whole cloves
- 4 green cardamom pods, cracked open with seeds and pods included
- 3 black peppercorns
- 1/2 tsp fennel seeds (optional)
- 1/2-inch (~4 g) fresh ginger, peeled and thinly sliced
- 3 black tea bags or 3 tsp loose-leaf black tea
- 1 cup (8 oz) whole milk or 2% reduced-fat milk
- 4 tsp (20 g) raw cane sugar or turbinado sugar
Instructions
In a medium saucepan, combine the water, cinnamon stick, cloves, cardamom pods, black peppercorns, fennel seeds (if using), and ginger. Bring to a boil over high heat.
Once the water is boiling, add the tea bags or loose tea leaves. Reduce the heat to medium-low and simmer gently for 7–10 minutes, allowing the spices to infuse deeply. The liquid will turn a rich burgundy hue and reduce slightly.
Stir in the milk and sugar. Raise the heat to high and let the mixture reach a gentle boil. Lower the heat to medium and simmer for an additional 5 minutes to blend the flavors.
For a creamier texture and bolder taste, increase the heat to high and let the chai come to a rolling boil for 1–2 minutes. Optionally, use a ladle to aerate the tea, which adds depth and smoothness.
Pour the chai through a strainer into cups, ensuring a smooth and spice-free drink. Adjust the sweetness as desired and serve immediately.
