Spicy Stir-Fried Fish: A Flavorful Feast

Ingredients

  • 500g fish, bones removed
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 4 cloves garlic, crushed and chopped
  • 1/2-inch piece ginger, chopped
  • 2 medium onions
  • 2 green bell peppers
  • 2 green chili peppers
  • 4 dry red chili peppers
  • 1 stalk leek or spring onions
  • A handful of curry, basil, or lemon leaves
  • 1 teaspoon red chili flakes
  • 3 tablespoons soy sauce
  • 4 tablespoons tomato sauce
  • 2 tablespoons vinegar
  • 3 tablespoons sunflower oil

Instructions

STEP 1: Prepare the Fish

Cut the fish into cubes.

Marinate the fish with lemon juice, salt, black pepper, and chili flakes. Let it sit for 10 minutes.

STEP 2: Prepare the Vegetables

While the fish is marinating, cut the onions and bell peppers into cubes.

Chop the chili peppers and leeks (or spring onions).

Cut the tomatoes into wedges.

Keep the sauces and vinegar handy for later use.

STEP 3: Cook the Fish

Heat 2 tablespoons of sunflower oil in a wok over medium-high heat.

Fry the fish cubes for a couple of minutes, or until golden on the outside. Remove the fish from the pan and set it aside.

STEP 4: Stir-Fry the Vegetables

Add 1 more tablespoon of oil to the pan.

Add the ginger, garlic, and curry leaves, and stir-fry for a few seconds until aromatic.

Add the onions and stir-fry for 2 minutes, or until they change color slightly.

Add the bell peppers and chili peppers and continue stir-frying.

Add the tomatoes, leeks, and the cooked fish cubes.

STEP 5: Add the Sauces

Pour in the soy sauce, tomato sauce, and vinegar.

Toss everything together to coat evenly with the sauces.

STEP 6: Serve

Turn off the heat.

Serve the stir-fried fish hot with plain rice for a main course or on its own as a light meal.
