Ingredients
- 2 tablespoons canola oil
- 1 medium onion
- 1 tablespoon crushed garlic
- 1 tablespoon crushed ginger
- 1 teaspoon pepper powder
- 2 sliced leeks, washed
- 100 grams preferred meat (shredded chicken or leftover chicken curry)
- 3 grated carrots
- 4 eggs
- 1 cup shredded cheese
- Salt and pepper
- 6 chopped roti
- Curry Spices:
- 1 tablespoon unroasted curry powder
- ¼ teaspoon pepper powder
- 2 tablespoons chili pieces
Instructions
Prepare the Roti
In a non-stick pan, heat the ghee over medium-high heat.
When the ghee is heated, pan-fry the paratha or roti until golden brown. Remove from heat and set aside.
Fry the Eggs
In a wok, heat the oil and add the eggs.
Deep fry the eggs, stirring while they fry, until fully cooked. Remove from the wok and set aside.
Sauté the Vegetables
In the same wok, heat canola oil and add the onion. Sauté until golden brown.
Add 2 teaspoons of chili paste, followed by the ginger and garlic.
Add the leeks and other vegetables (except carrots), and salt to taste. Stir-fry for a few minutes.
Combine Meat and Spices
Add the shredded chicken, pepper powder, chili pieces or flakes, and curry powder. Stir-fry until the vegetables are golden brown.
Add the grated carrots and mix them in. Taste and adjust the seasoning with salt.
Make the Cheese Sauce
In a separate pan, melt the butter over medium heat.
Once the butter starts melting, add milk and flour, whisking continuously to prevent lumps.
When the mixture is smooth, add the shredded cheese and stir until melted and fully incorporated.
Pour the hot cheese sauce over the prepared kottu just before serving.
