Chicken Kathi Rolls: A Delectable Street Food Experience

Ingredients

For the Dough:

  • 1 cup all-purpose flour
  • 1 cup wheat flour
  • 1 table spoon oil
  • Salt to taste
  • Warm water, as required

For the Filling:

  • 200g chicken breast, chopped
  • 1 onion, chopped
  • 1 tomato, chopped
  • ½ capsicum, chopped
  • 1 table spoon ginger garlic paste
  • 1 tsp red chili powder
  • 1 tsp garam masala powder
  • 2 tsp coriander powder
  • 1 tsp chat masala
  • 1 tsp cumin seeds/jeera
  • 1 table spoon oil
  • Coriander leaves, for garnishing
  • Lemon juice, to taste

Instructions

STEP 1: Prepare the Filling

  1. Heat oil in a kadai (wok) and add cumin seeds.
  2. Once the seeds start to splutter, add chopped onions and fry until golden brown.
  3. Add ginger garlic paste, red chili powder, coriander powder, garam masala powder, and chat masala. Mix well.
  4. Add chopped capsicum and tomatoes, cooking for about 3 minutes.
  5. Add the chopped chicken pieces and mix well. Season with salt.
  6. Cover with a lid and cook until the chicken is done.
  7. Remove the lid and increase the heat to let the water evaporate, making the chicken mixture slightly dry.
  8. Switch off the flame and garnish with chopped coriander leaves.

STEP 2: Prepare the Roti

  1. Mix all-purpose flour, wheat flour, salt, and oil together with your hands.
  2. Gradually add warm water and knead into a soft dough.
  3. Apply a little oil on top of the dough, cover it with a damp cloth, and let it rest for 30 minutes.
  4. Divide the dough into equal balls and roll each ball into a thin roti.
  5. Heat a tawa (griddle) and cook the roti on both sides until it gets light brown spots.
  6. Lightly beat one egg and pour half of it over one side of the roti. Cook until the egg sets and is fully cooked. Remove from the tawa and set aside.

STEP 3: Assemble the Kathi Rolls

  1. Place the prepared roti on a flat surface.
  2. Add a generous amount of the chicken filling inside the roti.
  3. Top with some chopped onions, capsicum, coriander leaves, and a squeeze of lemon juice.
  4. Roll up the roti tightly to encase the filling.
