To prepare delicious Chicken Noodles, start by cooking 200g of egg noodles according to the package instructions. Once cooked, drain the noodles and set them aside for later use.

Season 200g of thinly sliced boneless chicken with salt and pepper. In a wok or large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Stir-fry the seasoned chicken until it’s fully cooked and slightly browned. Remove the chicken from the pan and set it aside.

In the same pan, add another tablespoon of oil. Introduce 3 cloves of minced garlic and a grated 1-inch piece of ginger. Toss in 1 cup of thinly sliced mixed vegetables, such as carrots, bell peppers, broccoli, or snow peas. Stir-fry the vegetables for a few minutes until they are slightly tender but still retain a crisp texture.

Return the cooked chicken to the pan with the vegetables, ensuring everything is well-mixed. Add the previously cooked noodles to the pan, and pour in 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, and, if desired, 1 tablespoon of dark soy sauce for color. Toss all the ingredients together to evenly coat the noodles and other components with the flavorful sauces.

Finish the dish by drizzling 1 tablespoon of sesame oil over the noodles, providing a delightful aroma and additional depth of flavor. Toss everything one final time to incorporate the sesame oil.

Garnish the Chicken Noodles with chopped green onions if you prefer. Serve the dish hot, and adjust the seasoning with a bit more soy sauce or pepper according to your taste preferences.
