Ulundhu Vadai, also known as Medu Vada, is a popular South Indian snack made from urad dal (black gram) batter. It’s a delicious and crispy deep-fried snack. Here’s a simple recipe for making Ulundhu Vada
Ingredients:
- Whole urad dal (black gram)
- Green chilies, finely chopped
- Ginger, grated
- Curry leaves, finely chopped
- Onions, finely chopped (optional)
- Salt to taste
- Oil for deep frying
Instructions:
Soaking Urad Dal:
- Wash the urad dal thoroughly and soak it in enough water for at least 3-4 hours or overnight.
Grinding:
- Drain the soaked urad dal and grind it to a smooth and fluffy batter without adding too much water. The batter should be thick.
Seasoning:
- Add chopped green chilies, grated ginger, chopped curry leaves, and onions (if using) to the batter.
- Add salt to taste. Mix everything well.
Shaping the Vada:
- Heat oil in a deep frying pan over medium heat.
- Wet your hands with water to prevent the batter from sticking. Take a small portion of the batter, shape it into a ball, and flatten it slightly in the center.
Frying:
- Carefully slide the shaped vada into the hot oil, ensuring not to overcrowd the pan.
- Fry until the vadas turn golden brown and crispy. Flip them to ensure even frying on both sides.
- Remove the vadas with a slotted spoon and place them on paper towels to absorb excess oil.
Serve:
- Ulundhu Vadai is best enjoyed hot and crispy. Serve it with coconut chutney, sambar, or any of your favorite chutneys.
