INGREDIENTS

  • 1 recipe or 1 pound of frozen french fries Tempura Baked Fries
  • 1 tablespoon butter and 1 tablespoon flour
  • 3/4 cup milk plus additional milk to thin
  • Mild to medium, 6 oz.*1 1/2 cups of grated cheddar cheese
  • 1/8 teaspoon of powdered onion
  • 1/8 teaspoon of powdered garlic
  • 1/8 kosher salt spoon
  • 1/2 teaspoon red or white wine vinegar, or apple cider vinegar
  • Optional: a tablespoon of spicy sauce
  • For the garnish, use finely chopped parsley or chives.

DIRECTIONS

  1. Fries should be baked in accordance with the directions on the package or the Baked Fries recipe. Once the fries are finished, taste them and adjust the salt as needed.

  2. Melt the butter in a small or medium saucepan over medium heat. When the mixture is bubbling and golden, add the flour and whisk continuously for 1 minute.

  3. When you mix in a dash of milk, the sauce will become chunky right away. Adding splashes of milk at a time, whisking after each addition until all the milk is mixed and the sauce is smooth. Cook extremely thick and smooth for 2 to 3 minutes, whisking continuously.

  4. Add the spices after turning the heat off. One handful of cheese at a time, stirring until melted, then add more. Return heat to low once you’ve reached the desired melting temperature for the cheese to finish melting. When completely smooth, it will be heavy. Once it has reached a pourable consistency, whisk in 2 more tablespoons of milk before adding the vinegar (and hot sauce, if needed). If the sauce must rest while the fries cook, reheat it on the burner and, if required, add a little extra milk to make it pourable.

  5. Spread the warm cheese sauce over the fried fries in a serving dish. Serve immediately after adding chopped parsley or chives as a garnish.
