
INGREDIENTS
- 1 large slice of watermelon and 1/4 cup of it, to give around 120 ml juice
- ½ of a large lime
- 6 substantial mint leaves, or more if smaller
- Sugar to taste
- 45 ml of Bacardi white rum
- 60 ml of sparkling water
- Mint leaves
DIRECTIONS
Blend the watermelon pieces until smooth in a blender. Press firmly through a fine strainer while reserving seeds and thick pulp.
If you don’t have a muddler, use the end of a wooden spoon or the pestle to muddle the mint leaves and sugar with the lime juice in a highball glass.
Juice from a watermelon and rum are added, combined, and then ice is added. Before serving, top out the glass with soda water and mix. Place a slice of watermelon on top of the glass and a sprig of mint in your hand to serve as garnish.
