  • 1 large slice of watermelon and 1/4 cup of it, to give around 120 ml juice
  • ½ of a large lime
  • 6 substantial mint leaves, or more if smaller
  • Sugar to taste
  • 45 ml of Bacardi white rum
  • 60 ml of sparkling water
  • Mint leaves

  1. Blend the watermelon pieces until smooth in a blender. Press firmly through a fine strainer while reserving seeds and thick pulp.

  2. If you don’t have a muddler, use the end of a wooden spoon or the pestle to muddle the mint leaves and sugar with the lime juice in a highball glass.

  3. Juice from a watermelon and rum are added, combined, and then ice is added. Before serving, top out the glass with soda water and mix. Place a slice of watermelon on top of the glass and a sprig of mint in your hand to serve as garnish.

  4. Your Mojito is ready to chill you on a hot sunny day!
