How to Make the Most of Your Leftover Chicken

Whether you live alone, have a big family to feed, or just prefer spending less time slaving over the stove – the whole roasted chicken is your best friend. All it needs is quality time in the oven with a delicious marinade, and you have something that can make your meals make themselves for days on end.

Here are 10 quick tips that will help you make the most of your leftover chicken once you have finished your meal. We were thinking of roast chicken but many of these apply to chicken curry, stir fried chicken, or any left-over chicken dish you may have.

  • Tip 01

    When you roast a whole chicken carve it up and store the pieces in separate dishes or bags to increase their freshness

  • Tip 02

    Finely chop up the chicken and mix well with some mayonnaise and onions (add some green chili for an extra kick) and make a great sandwich spread.

  • Tip 03

    Make the same as above, add half a teaspoon of the mixture per small cracker and sprinkle some pepper on top. Instant appetizer!

  • Tip 04

    Take some meaty boneless pieces, toss in a little flour, and fry. Delicious meal with some veggies!

  • Tip 05

    Throw the meat of the chicken into a food processor with some olive oil, dried herbs, roasted garlic, and salt to taste. Blend until completely smooth for your own home-made pate.

  • Tip 06

    Cut the chicken in cubes and mix through some boiled pasta, olive oil and chili flakes for your own fancy pasta dish!

  • Tip 07

    Take a bell pepper or eggplant, cut in half, and scoop out the insides. Stuff with the finely chopped chicken meat, drizzle olive oil, add some cheese on top and pop in the oven for 10-15mins. An incredibly filling meal!

  • Tip 08

    Toss with some leftover veggies and rice to make an easy fried rice

  • Tip 09

    Add strips to your Maggie noodles or cup soup to make it more filling!

  • Tip 10

    Use the boney pieces and leftover small bit to boil in water with some garlic and salt to make home-made chicken stock!
